This past week was full of wedding events and wedding planning.  Courville's fajitas were a huge hit at the wedding I attended on Galveston Island at the Garten Verein! The food was perfect for the beautiful and crazy good time we had celebrating one of the Chic Chef girl's nuptials.  Early in the week I worked with several brides and their coordinators to plan the perfect menu for their days coming up in the fall and winter all over the Golden Triangle.  The events will be held at The Laurels, Broussard's Farm and Tyrrell Park and each bride's menu has been personalized to fit their vision for the perfect wedding. I enjoy being able to help create something unique to each ones tastes.  Big Rich's crew was very busy this week catering an on site event for 1000 people for Orascom E & C while also hosting the Exxon Mobil Retiree party with Beef Tips, Squash Casserole, Black-Eyed Peas and more at the kitchen!  Friday they jumped back on the wedding train with a rehearsal dinner at Courville's with Ribeyes, Grilled Chicken, Baked Potato Casserole, Cajun Green Beans and finished with Apple & Peach Cobblers.  Courville's was beautifully decorated for the night and shows how you can transform the venue for any event. We also had a fish fry for the Classic Southeast Texas staff during the day. The Yogurt Spot trailer was out cooling everyone of at the races with delicious frozen desserts at Golden Triangle Raceway Park.  Saturday was a summer barbecue day from the Courville's pits going to the Elk's Lodge, to a Wedding Reception at Rocking Dollar Ranch, and to the Forest Park High School class of 1981's 35 year reunion.
