Our long weekend was spent Crystal Beaching! The crazy windy weather on Friday night made it a little more interesting using the cajun microwave while we roasted a 73 pound whole pig stuffed with 2 whole chickens filled with boudin, lots of aromatics & Jalapeno Cornbread. It made for some pretty delicious pulled pork & roasted chicken tacos with fresh napolito pico de gallo made by a friend and sauteed bell peppers & onions! We attended the Texas Frog Fest which benefits the Lone Survivor Foundation. There, we took in some of our Southeast Texas local musicians including our own Donnie Courville in the 10 Man Jam. Saturday evening we got to hang out with our friends at Stingaree Down Under and had a blast listening to the Tejas Brothers. The Yogurt Spot Trailer was busy at work Sunday at a private event on the peninsula. This week we will be feeding the folks at Total in Port Arthur for a safety lunch. We also will be hosting the fantastic Radney Foster at Courville's on Thursday evening. The upcoming weekend is filled with wedding festivities from feeding a couple locally for their rehearsal dinner. Saturday night we will be on Galveston island serving up Fajitas for a beautiful wedding at the featured venue in the picture of the historical 1880 Garten Verein.
